Owner Neil Farrell was heavily in debt and had turned off his mobile phone to avoid the debt collectors. Head Chef Richard Collins trained at Claridges, is paid £25,000 a year and he knows what they are doing at the restaurant isn't working. Gordon does order from the menu, instead he tells Richard to cook his best dishes, duck cakes and chilli jam and a lamb shank. The duck cake looks like a scotch egg and has a bone in and the lamb shank with parsnip crisps is fatty and the crisps were covered in smelly oil. Gordon meets the staff - Iain, a waiter who decided he wanted to cook, Claire, a part time chef and owns a bookshop, Randal, the Scottish kitchen porter and Craig, the trainee chef. Gordon observes a busy dinner service and the kitchen collapses into chaos with no communication. The steak is returned, there are orders for non-existent tables and people are left waiting. Next we see Gordon's undercover footage of meat being tenderised with a frying pan and pesto being mixed on the floor. The kitchen is given a deep clean by both Gordon and the staff. Gordon revamps the menu and suggests a £10 two course lunch and an open mackerel sandwich. At the next dinner service, Gordon tells Neil that he needs people to avoid ordering for the cheap Early Supper menu but from the A La Carte menu.
